An odd thing to do considering I've made my living out of teaching Italian cuisine and running cookery schools across Europe.

But India haunts me with its allure of heady spices, scents, and food combinations.

I book myself on a culinary trip to southern India with my 21 year-old son Jamie for company, staying at several cookery schools.

Some are set in former Raj palaces, others rustic family homes in Kerala, the Western Ghats, Tamil Nadu and Chennai.
